Somewhere Over The Rainbow.. Cake!!




This is my favourite cake to make and eat, i really don't need to explain why, it does all the talking for itself.

Recipe

To start, weigh your eggs. Crack them into a bowl and weigh them, giving you a measurement to use for the rest of your recipe. I used 7 eggs, which weighed 360g.

7 eggs (approx 360g)
360g self raising flour
360g Stork
360g caster sugar
2tsp baking powder
½ tsp vanilla extract
6 Sugarflair gel food colours -red, orange, yellow, blue, green and purple
(orange can be made from yellow and red, purple can be made from red and blue)

600g icing sugar
300g butter
½ tsp vanilla extract


Method

Preheat oven to 180C/fan 160C/gas 4

Using an electric hand whisk or mixer, cream together the Stork and sugar until pale and fluffy and add a splash of vanilla.

Sift the flour with the baking powder into a bowl.

Add the eggs in 3 lots to the mixer, alternate adding the eggs with 4tbsps of flour.

On a very low speed, add the rest of the flour and mix slowly until incorporated.

Divide the mixture equally between 6 bowls and colour each mixture using the gel colours. 


Spoon into prepared sandwich tins and level the top. If you only have 2 tins, bake in 3 lots.

Bake for 10 minutes, skewer test the cake to make sure it is completely cooked.
  


Gently turn out on a cooling rack and allow to cool completely.



Make up a large batch of butter icing by mixing the butter on a high speed until pale and fluffy, then cream in the icing sugar and add vanilla to taste.

Level each cake layer with a knife, making sure they're all flat and a similar height.

Layer up your cake, starting with the purple layer and cover the top with a layer of butter cream, followed by the blue, green, yellow, orange and then the red layer for the top, all sandwiched with a layer of butter cream.

Using a pallet knife, apply a crumb coat by covering the whole cake in a thin layer of butter cream and refrigerate for 30 mins. This will stop any crumbs from showing through the final covering.

Once set, cover the cake with the rest of the butter cream and decorate.
